Types of Iberian shoulder (paleta)
Ibérico paleta is classified by breed and diet, which defines its flavour, aroma and texture. 100% acorn-fed Ibérico (black seal) comes from purebred animals finished on acorns during the montanera: it offers fine intramuscular fat, nutty notes and a long finish. Acorn-fed 50–75% (red seal) preserves the dehesa character with a slightly more direct profile and excellent value for money. Cebo de campo (green seal) combines semi-free-range life with feed and pasture, delivering juiciness and balance. Cebo (white seal) is more uniform and gentle, ideal for everyday consumption or for discovering Ibérico. Owing to its smaller size compared with jamón, paleta usually has a shorter curing time and a more intense aroma.
Add to this the regions and curing styles: Jabugo (intense and elegant), Guijuelo (sweetness and unctuous texture), Dehesa de Extremadura (balance and complexity) and Los Pedroches (clean, persistent aromas). At Alba Ibérico we select joints with full traceability and official certification, and offer whole, boneless or sliced, vacuum-sealed formats with careful presentation, so you can choose the sensory profile that suits you best.
How to choose the right shoulder ham (paleta)
Start by defining use and budget: for special occasions, choose acorn-fed; for everyday enjoyment, cebo de campo or cebo. Pick the format to match your consumption: whole piece if you enjoy knife carving and want the curing to evolve at home; boneless if you use a meat slicer and want maximum yield; vacuum-sealed sliced packs if you prioritise convenience and perfectly sized portions. Note that, compared with jamón, the paleta (foreleg) offers greater aromatic intensity and a slightly lower yield due to its bone proportion, in exchange for a more practical size and a more accessible price.
Always check the colour seal and the origin so you know exactly what you’re buying. If you’re unsure between categories or regions, at Alba Ibérico we’ll advise you before and after purchase, with 24–48-hour delivery, transparent prices and gift-ready packaging. That way you get it right first time and enjoy at home a juicy, aromatic paleta that’s ready to share.
